LoanLogics Associates Grill and Chill on Labor Day Weekend 2022

Is anyone else ready for the long Labor Day holiday weekend? While there is still a flurry of client needs to meet, new engagements to explore, thought leadership to create, research to be done, news to publish…and so much more, it’s nice to take a break with friends and family.

With that in mind, we asked our LoanLogics associates what their rest & relaxation holiday plans were in our corporate messaging channel this week.  We received a bunch of fun responses that included recipes that we thought we’d share with our audience to perhaps inspire some of your individual plans.  And, it gives a great behind the scenes (BTS) of our team. 

From the Implementation team, one of our colleagues is attending a Red Hot Chili Peppers concert this weekend and plans to take that pepper theme to the grill.  Here’s a fiery but simple recipe for grilled banana peppers with feta cheese.

Marketing is also coming in hot recipe-wise, with this Thai-inspired coconut grilled chicken thighs and coconut rice.

For the over 21 crowd, one of our festive Product Managers is making some boozy cocktails for his family and friends this weekend. These are a few of his crowd pleasers that are perfect for the end of summer.

Frozen Peach Bellinis

Frozen peaches

Peach schnapps (~1 cup, more for stronger/sweeter, less for weaker/less sweet)

Cheap champagne

Put it all in a blender. Super easy, super good.

Summer Shandy

1.5oz Deep Eddy Lemon Vodka

12oz Blue Moon

Juice from 1/2 orange

Mix together and pour over ice.

Members of our Sales Ops and Loan Quality team have marinating meat and veggies on the docket. What works as both a great marinade and drizzle? Chimichurri of course.   Who doesn’t love a green herby sauce loaded with garlic and a bit of zip from some red wine vinegar? 

Another great condiment comes from one of our Product Owners who has a salsa recipe she said is her ‘go-to” for cookouts.

Homemade Salsa

2 cans black beans washed and drained

2 cans of Mexicorn washed and drained

3 large chopped tomatoes chopped

1 bunch of green onions chopped

2 small red onions chopped

2 packages dry Italian salad dressing

½ cup red wine vinegar

½ cup canola oil

Mix all ingredients together in a large bowl.  Serve with your favorite tortilla chips.  Prepare ahead and refrigerate overnight for flavors to blend.

And, we, of course, had colleagues who were taking the weekend off from cooking and letting their grill chill while riding on a pontoon in Florida and kicking their feet up at the beaches in New Jersey and Virginia with family and/or friends.
